A vegetable flooded with the smells of the Mediterranean. Combined with the special flavor of Mastiha Chios (0.5%), the baked eggplant spread adds a new dimension to cooking. Cooked with extra virgin olive oil and fresh eggplant (75%), it accompanies all the grilled meats and green salads. It is a great appetizer either as a salad or as a dip.
