Roasted Pepper, Mastiha and Goat Cheese Spread

INGREDIENTS 12 PORTIONS
  • 3-4 Τbsp. Mastiha-scented olive oil

  • 6 large red peppers, roasted, peeled, seeded, and coarsely chopped, or 6 roasted red peppers in olive oil, drained and chopped

  • 1 ½ cups fresh Greek goat cheese

  • 2 tsp. fresh lemon juice

  • Salt and freshly ground black pepper

PREPARATION
  1. Combine all the ingredients in a food processor and pulse on and off until creamy.

  2. Transfer to a serving bowl and refrigerate for 1 hour or up to 2 days. Serve with fresh vegetables such as cauliflower florets, Belgian endive leaves or celery sticks.
