2 pounds (1 kilo) baby spinach, stems trimmed
2 pounds (1 kilo) baby spinach, stems trimmed
1 large navel orange, cut into 8 slices
2 garlic cloves, slivered
1/3 cup extra virgin olive oil
1/3 Mastiha-flavored olive oil
Salt
Wash the spinach thoroughly and drain well.
In a deep skillet heat the unscented olive oil and cook the spinach until wilted. Then add the garlic, salt and orange pieces. Cover and simmer over low heat for 10-15 minutes. Drizzle with the Mastiha-scented olive oil and serve.
