Classic Bruschetta with Mastiha-Scented Olive Oil

INGREDIENTS 4 PORTIONS
  • 8 slices of sourdough or country-style bread

  • 3 large garlic cloves, cut in half (lengthwise)

  • ½ cup Mastiha-scented extra virgin olive oil

  • Coarse sea salt

  • 1 large tomato, cut in cubes

  • 2 Τbsp. extra virgin olive oil

  • 2 dashes of basil οr thyme

  • 1 Τbsp. finely chopped fresh oregano

  • Salt and pepper

PREPARATION
  1. Combine the tomato, Mastiha-scented olive oil, basil or thyme, salt and pepper.

  2. Toast the slices of bread on the grill. As soon as they turn slightly golden/brown, rub them with the garlic and brush with remaining, unseasoned olive oil. Salt and pepper to taste. Garnish with 2 tablespoons of the tomato mixture and sprinkle with oregano.
