3 large garlic cloves, cut in half (lengthwise)
½ cup Mastiha-scented extra virgin olive oil
Coarse sea salt
1 large tomato, cut in cubes
2 Τbsp. extra virgin olive oil
2 dashes of basil οr thyme
1 Τbsp. finely chopped fresh oregano
Salt and pepper
Combine the tomato, Mastiha-scented olive oil, basil or thyme, salt and pepper.
Toast the slices of bread on the grill. As soon as they turn slightly golden/brown, rub them with the garlic and brush with remaining, unseasoned olive oil. Salt and pepper to taste. Garnish with 2 tablespoons of the tomato mixture and sprinkle with oregano.
